maahinen kirjoitti: Vielä on avautumatta, mitä ovat saaku-kryynit tai miten (ja miksi) särki leikataan haavaan: kalakeittoon jos otetaan särkiä, pitää ne haavoihin leikattaman, ahvenet keitetään siltään.
Veikkaisin, että särjen nahkaan leikataan viillot, mikä tarkoittaisi, että kalat menevät keittoon kokonaisina. Sitä en ymmärrä, miksi keittoa varten tarvitaan viillot, uuniin laitettaessa olisi ihan loogista. Joten, arvaukseni saattaa olla aivan vääräkin.

Juolahti mieleen katsoa, löytyisikö alkuperäistä Kokki-Kirjaa - opuksessa mainitaan vain kääntäjä J.F. Granlund, ei tekijää. Google johdatti Kristina Anttilan kirjasta laatimaan pro graduun, josta selviää että on jo kolmas kirjaan pohjautuva opinnäyte ja että saaku-kryyni on saagosuurimo eli indonesialaisen saagopalmun ytimestä valmistettua tärkkelystä. Kalan käsittelyä ei pohdita. Lisäksi sanotaan, että alkupäinen on luultavasti Gustafva Björklundin Kokbok 1847, mutta että Granlund on saattanut yhdistellä kirjoja ja laittaa omiaankin. "Lopullisesti asia ratkeaisi vain näitä kahta teosta vertailemalla." Kuulostaa aika leväperäiseltä, ettei gradun tekijä ole tuon vertaa vaivautunut tutkimaan. No, Kokbok löytyi helposti ja arvaus on oikea: Kokbok on pohjalla, muttei läheskään sellaisenaan. Keittoja on tuplaten enemmän, muttei ollenkaan kalakeittoa. Paistettujen ahventen kohdalla sanotaan suomeksi, että ne "haavotetaan kahdenpuolen", ja tämä resepti löytyy myös ruotsiksi "skåras fint på båda sidor". Täytynee tarkoittaa, että niihin vedetään pitkä viilto - tässä on jokin järki, koska seuraavaksi ne suolataan. Fileoinnista ei ole kysymys, se käsitellään erikseen. Suomeksi ahvenresepti jatkuu paistamalla voissa ja tarjoamalla vihriäisaineitten kanssa. Ruotsiksi ne leivitetään munamaidossa ja korppujauhoissa ennen paistamista ja tarjotaan korinttikastikkeessa.

Positiivinen yllättäjä. Uhrilampaat on lukulistalla ja vain sen vuoksi aloin lukea Punaista lohikäärmettä, sehän on sarjan 1. osa, Uhrilampaat on 2. Vanha (1981), ei niin paljoa mainetta niittänyt kirja ei hirveästi houkutellut, mutta sehän oli tosi hyvä! Nyt on kovat odotukset Uhrilampaiden suhteen... 4/5

Oli aika puuduttava teos, en ihan ymmärrä miksi tämä on jonkinasteinen klassikko. Vaimo pettää miestään ja kokee sitten tästä olemassaolon tuskaa jne, ja kaikki tämä on kerrottu sen miehen silmin kenen kanssa vaimo pettää. Odotan aina enemmän sisältöä näille klassikoille, ja sitten petyn kun sitä ei ole. Ehkä tämänkin teoksen hienous piilee yksityiskohdissa tai isommassa sanomassa, joka ei minulle auennut. En vaan jaksanut loppua kohden lukea tätä kovinkaan tarkasti.
